Made a few versions of savoury pancakes for lunch. This photo is the spicy tuna version, topped with an egg. Also made some cheese and tomato pancakes... yum!! This pancake looks like a pizza but in term of taste is more like an open-face sandwich. Would definitely make this again for T when he is home.
Ingredients-Pancakes (4-5 Servings):
- 1 large egg
- 1¼ cup cold fresh milk
- ¾ cup all-purpose flour
- ¼ cup rice flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 tsp sugar
- Pinch of salt OR Chicken Stock
- Some herbs (optional)
Toppings (Suggestion):
- Eggs
- Tuna Spread
- Onion
- Cheese
- Sausage
Methods:
- Sift together flour, baking powder and baking soda. Set aside.
- Whisk eggs in a large mixing bowl. Stir in milk, sugar and salt. Mix well.
- Stir in sifted flour and mix till just combined. If the mixture is too thick, add a little bit more milk.
- Cook pancake with non-stick pan over low heat. When it is about ready, add toppings. Serve warm.
